Every fine dining and casual dining restaurant in the Wynn and Encore Hotels in Las Vegas, NV, USA has a secret vegan menu. The vegan menus are not posted outside the restaurant alongside their non-vegan menus, they are not posted on the Wynn and Encore restaurants website, and they will not offer them to you when you are seated. You must know that they have a vegan menu, and you must ask for it. Some of the chef-crafted vegan appetizers, entrees, and desserts are quite remarkable...it's unfortunate that only those in the know can savor these very special dishes.

The vegan offerings at each establishment vary widely, so be sure to browse the menus. Also, all menus are subject to change based on season and ingredient availability. It's also worth noting that some restaurants combine their vegetarian and vegan menus, so be sure to verify when you order. We noticed one item with egg noodles and another with honey (the vast majority of items on the vegetarian menus are vegan, though). Some of the higher end restaurants do have dress codes, so be sure to check ahead.
